I would have said Pickers, Loggers and Miners make a lot of quick gold however Armorers and Gun Makers craft a lot of higher end products for higher but slower income (i.e. they need to craft things instead of just gathering; example Steel pipes, Leather and backpacks.). It also depends on which profession is most saturated in your server.
My only advice for beginners is to sell basic materials however when possible, invest in higher quality materials such as plastics, steel, leather, steel pipes, etc. Otherwise you can farm polymor coating and film fabrics (in Snow Highlands) which (polymors) sell quickly.
